Ingredients

For the Salmon:

  • 4 salmon fillets (skin on or off, your preference)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried dill (or fresh if available)
  • Salt and freshly ground black pepper, to taste
  • Lemon wedges, for serving
  • Fresh dill sprigs (optional, for garnish)

For the Dill Potatoes:

  • 1 ½ pounds baby potatoes (halved or quartered)
  • 1 tablespoon olive oil
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika (optional for extra flavor)
  • Salt and freshly ground black pepper, to taste

Instructions

1. Prepare the Potatoes:

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the halved or quartered baby potatoes with olive oil, chopped dill, garlic powder, paprika (if using), salt, and pepper.
  • Spread the seasoned potatoes in a single layer on a large sheet pan, making sure they are evenly spaced to ensure even cooking.

2. Roast the Potatoes:

  • Place the sheet pan with the potatoes in the preheated oven and roast for about 20 minutes, stirring once halfway through cooking. The potatoes should be just tender by this point.

3. Prepare the Salmon:

  • While the potatoes roast, prepare the salmon fillets. Pat them dry with paper towels to remove excess moisture.
  • Drizzle olive oil and lemon juice over the fillets.
  • Sprinkle garlic powder, dill, salt, and pepper evenly on both sides of the salmon.

4. Add the Salmon to the Pan:

  • After the potatoes have roasted for 20 minutes, remove the sheet pan from the oven.
  • Push the potatoes to one side of the pan and place the seasoned salmon fillets on the other side.
  • Return the sheet pan to the oven and bake for another 12–15 minutes, or until the salmon is cooked through and flakes easily with a fork.

5. Serve:

  • Once the salmon and potatoes are done, remove the sheet pan from the oven.
  • Garnish with fresh lemon wedges and dill sprigs, if desired.
  • Serve immediately and enjoy!
